About Australian Pink Salt
This particular Pink Salt comes from underground aquifers located under the Murray River, in the Murray Darling Basin region in Australia's Southwestern state of Victoria and gets it's coloring from salt tolerant algae that produce a red carotene based pigment. The Murray River is the largest river in Australia, containing extremely high salinity levels which have been a significant environmental issue for Australia, especially as the levels continue to rise. When facilities were developed a few years back to remove the salt from the water for agricultural and industrial purposes, it was discovered that the flat salt crystals produced from the process were pink to apricot in color and also possessed a flavor so unique that Australia's professional chefs raved over it!
